Finally found out myself. It has to be "engineid" instead of "engine ID". Everything else is correct.
So if anyone in the future has this issue:
Enable SNMP in Switch, safe config, export running config, edit it with notepad.
In there is a section now with snmp-settings. After that insert the following line:
snmp-server engineid local 8000000b03xxxxxxxxxxxx (x's are device mac
Upload the modified config as startup-config, Reset the device (don't save in GUI before reset).
After that everything works as expected (Engine ID in SNMP-User is auto-filled).

Ok, i tried it by contacting support and i got the info but it doesn't work and now support is acting like a weird AI and only replying by the same instructions i already tried. So if someone around here is reading please assist me by exporting a running config from your ION-Switch and looking for a line with Engine ID or similar in it.
Because what support suggests is to add the following line to exported running config and import it to startup config but import isn't possible. Maybe because of a syntax error. So please compare it to the statement in your config and tell me if it's correct.
The Line is: snmp-server engine ID local 8000000b03xxxxxxxxxxxx (x's are device mac)
When i try to import it i get error "Copy: Error in configuration download Line: 37 Command..." followed by above statement.

I have the same issue, and really don't want to do a factory reset at this point as I have the switch configured the way I want. There should be a way to modify a downloaded config and upload it to fix it. Factory resetting to fix an automatic configuration issue isn't acceptable to most people.
